Roasted Salmon with Honey & Fall Root Veg
Takes 30 mins – serves 4/5
20/25 ounce salmon filet (4/5 portions)
4 tbsps. honey
1 red onion
2 potatoes peeled
1 sweet potato peeled
2 carrots peeled
Bunch of thyme
Cut all veg into similar sized 1-inch cubes, onion can be cut into 6 equal pieces. Lay all veg and salmon on oven tray covered with parchment paper. Drizzle with olive oil, honey, salt/pepper and fresh thyme.
Slide into oven set to 400 for 30/35 mins. Let rest for 5 mins.
